Organic Bruschetta Chicken

Bruschetta Chicken and Pasta
Ingredients
  • 2lbs organic boneless skinless chicken breasts
  • 1 14.5 oz caned organic diced tomatoes
  • 3 cloves of organic garlic
  • 3 tbsp organic olive oil
  • 3 tbsp organic basil
  • 3 cups of pasta
Tools
·         Medium mixing bowl
·         Strainer
·         Medium saucepan
·         Wooden spoon
·         Cutting board
·         Measuring cup
·         Measuring spoons
Directions
1.       In the medium mixing bowl mix: tomatoes, garlic, olive oil and basil. Set aside.
2.       Cook the pasta according to instructions on box, rinse and set aside.
3.       Cut the chicken in strips, put in saucepan and cook for 10 minutes, add ¾ of the bruschetta mixture. Cook for an additional 10 minutes or until cooked thoroughly.
4.       Plate pasta, then add chicken mixture and top each plate with remaining bruschetta, enjoy!

​6 servings, approximately 400 calories a serving

​Tip: to reduce calories skip the pasta!

Why choose organic instead of natural products?

Do you know why organic is so essential for your lifestyle? Organic ingredients have to be regulated and have little to no pesticides on them. Natural has been confused as organic for many people however they are very different. Did you know that there are no regulations on natural products? Anyone can label something natural.

​One of the things that I learned in my many years in the beauty industry was that your skin absorbs over 60% of what is put on it. So basically anything you put on your body a significant amount goes into your body. So you could be putting many harmful things into your body without even knowing it.

​I always say that if you don't know what the ingredients are that you're putting on your skin, maybe they shouldn't be there. In my opinion you should be able to recognize all the or at least most of the ingredients your putting on your skin.

Organic Blueberry Banana Muffins

Ingredients
  • 4 large Organic ripe bananas
  • 3⁄4 cup Organic sugar
  • 1 large organic egg, slightly beaten
  • 1⁄3 cup organic no salt added melted butter
  • 1 ¼ cup organic blueberries
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1⁄2 teaspoon salt
  • 1 1⁄2 cups organic flour
  • Organic cooking spray
Tools
·         Small mixing bowl
·         Large mixing bowl
·         Measuring spoons
·         Measuring cup
·         Muffin pan (12 count)
·         Muffin wrappers (optional)
Directions
  1. Mash bananas in a large mixing bowl.
  2. Add sugar and egg, stir together.
  3. Add butter and blueberries, mix well.
  4. Combine dry ingredients in separate bowl.
  5. Gently stir dry ingredients into banana mixture.
  6. Pour into 12 well-greased muffin cups or skip spray and use muffin wrappers.
  7. Bake at 375 degrees for 23 minutes.
  8. Test in the middle with the a toothpick, if toothpick comes out clean, let cool and serve.
